Description

A Mediterranean inspired salmon dish roasted with za’atar, garlic, lemon and olive oil. Bright, healthy and perfect for holidays or weeknight dinners.


Ingredients

Scale
  • 4 salmon fillets

  • 2 tablespoons za’atar

  • 3 garlic cloves, minced

  • 3 tablespoons olive oil

  • 1 lemon, sliced

  • 1 tablespoon lemon juice

  • 1 cup cherry tomatoes

  • 1 tablespoon chopped parsley

  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400 F.

  2. Mix olive oil, garlic, za’atar, lemon juice, salt and pepper.

  3. Place salmon on baking sheet. Spread mixture over fillets.

  4. Add tomatoes and lemon slices around salmon.

  5. Roast 12 to 15 minutes until salmon flakes.

  6. Garnish with parsley and serve.

Notes

Adjust za’atar based on preference. Add chili flakes for heat.
