Description

A cozy, stovetop soup inspired by classic white chicken lasagna. Tender chicken, spinach, mushrooms, and lasagna noodles simmered in a creamy Parmesan broth for the ultimate Italian comfort dish.


Ingredients

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 cup diced onion

  • 2 cups sliced mushrooms

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 2 cups cooked shredded chicken

  • 6 lasagna noodles, broken into pieces

  • 2 cups fresh spinach

  • ½ cup grated Parmesan cheese

  • ½ cup ricotta cheese (for topping)

  • 1 tsp Italian seasoning

  • ½ tsp dried thyme

  • Salt and pepper to taste


Instructions

  • Cook noodles in salted water; set aside.

  • In a large pot, heat butter and olive oil. Sauté onion and mushrooms 5 minutes, then add garlic.

  • Add chicken broth and bring to a simmer. Stir in chicken and seasonings.

  • Add cream and Parmesan; simmer gently 10 minutes.

  • Stir in spinach and noodles. Serve topped with ricotta and extra Parmesan.

Notes

Add red pepper flakes for a mild kick.

Substitute kale for spinach if preferred.

For thicker soup, stir in 1 tablespoon flour with mushrooms before adding broth.
