Ingredients

1 tbsp olive oil

1 tbsp butter

1 cup diced onion

2 cups sliced mushrooms

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 cups cooked shredded chicken

6 lasagna noodles, broken into pieces

2 cups fresh spinach

½ cup grated Parmesan cheese

½ cup ricotta cheese (for topping)

1 tsp Italian seasoning

½ tsp dried thyme

Salt and pepper to taste
Instructions

Cook noodles in salted water; set aside.

In a large pot, heat butter and olive oil. Sauté onion and mushrooms 5 minutes, then add garlic.

Add chicken broth and bring to a simmer. Stir in chicken and seasonings.

Add cream and Parmesan; simmer gently 10 minutes.

Stir in spinach and noodles. Serve topped with ricotta and extra Parmesan.
Notes
Add red pepper flakes for a mild kick.
Substitute kale for spinach if preferred.
For thicker soup, stir in 1 tablespoon flour with mushrooms before adding broth.
