Ingredients
4 large sweet potatoes, peeled and cubed
4 tbsp unsalted butter, melted
¼ cup brown sugar
¼ cup milk or cream
2 eggs, beaten
1 tsp vanilla extract
½ tsp cinnamon
¼ tsp nutmeg
2 cups mini marshmallows
Instructions
Preheat oven to 350°F. Grease a 9×13-inch baking dish.
Boil sweet potatoes until tender. Drain and mash until smooth.
Mix in butter, brown sugar, milk, eggs, vanilla, and spices until creamy.
Spread mixture evenly in the prepared dish.
Top with marshmallows and bake for 25–30 minutes, until golden brown.
Notes
Add pecans or streusel topping for extra crunch.
Reduce sugar if you prefer a less sweet casserole.
