Description

A fresh and healthy couscous salad made with spring vegetables, herbs, and lemon. Perfect for easy spring meals or light summer dishes.


Ingredients

Scale
  • 1 and a half cups dry couscous

  • 1 cup green peas

  • 2 cups fresh greens

  • 1 quarter cup fresh herbs, chopped

  • 1 small red onion, thinly sliced

  • Juice of 1 lemon

  • 3 tablespoons olive oil

  • Salt and pepper to taste


Instructions

  1. Prepare couscous according to package instructions.

  2. Chop vegetables and herbs.

  3. Whisk lemon juice, olive oil, salt, and pepper.

  4. Combine couscous, vegetables, herbs, and dressing.

  5. Toss gently and adjust seasoning.

  6. Let rest briefly before serving.

Notes
