Ingredients

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 cup diced onion

  • 1 cup diced carrot

  • 1 cup diced celery

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 tsp Italian seasoning

  • 1 cup heavy cream

  • 16 oz potato gnocchi

  • 2 cups fresh spinach

  • Salt and pepper, to taste


Instructions

  • Brown sausage in a pot; drain excess fat.

  • Add butter, onions, carrots, celery, and garlic; sauté 5 minutes.

  • Add seasoning and broth; simmer 10 minutes.

  • Stir in gnocchi; cook until tender.

  • Add cream and spinach; simmer gently until heated through.

Notes

Substitute kale for spinach or turkey sausage for a lighter option.

For thicker soup, mash a few gnocchi pieces directly in the pot.
