Description

This Roasted Sweet Potato Goat Cheese Salad is a vibrant, satisfying fall dish with roasted sweet potatoes, candied pecans, creamy goat cheese, and citrus. Perfect for Thanksgiving or any cozy dinner.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • 6 cups mixed greens

  • ½ red onion, sliced

  • ½ cup pecans, toasted or candied

  • ½ cup goat cheese, crumbled

  • 2 mandarins, peeled and segmented

  • ¼ cup dried cranberries

  • 3 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey


Instructions

  1. Preheat oven to 425°F and roast sweet potatoes until caramelized.
  2. Toast pecans in a dry pan until fragrant.
  3. Prepare the dressing by whisking olive oil, balsamic vinegar, mustard, honey, salt, and pepper.
