Description

A bright, zesty, one pan spring dinner featuring creamy orzo, lemon pepper shrimp, garlic, basil, and fresh lemon. Quick, flavorful, and perfect for busy nights.


Ingredients

Scale
  • 1 pound shrimp peeled and deveined

  • 1.5 cups orzo

  • 2 tablespoons olive oil

  • 1 tablespoon lemon pepper seasoning

  • Zest and juice of 1 lemon

  • 3 garlic cloves minced

  • 1 small onion diced

  • 3 cups chicken broth or vegetable broth

  • 2 tablespoons butter optional

  • Fresh basil for garnish

  • Salt and pepper to taste


Instructions

  • Toss shrimp with lemon pepper seasoning, oil, and salt.

  • Sear shrimp 1 to 2 minutes per side and remove.

  • Sauté onion and garlic.

  • Toast orzo for 1 to 2 minutes.

  • Add broth, lemon zest, and lemon juice.

  • Simmer 10 to 12 minutes until creamy.

  • Stir in butter and basil.

  • Return shrimp to pan and serve.

Notes

Add spinach or peas for extra color.
