Description

A bright and refreshing chicken salad made with lemon, basil, and a creamy dressing. Perfect for spring and summer meals.


Ingredients

  • 3 cups cooked chicken, shredded or diced

  • 1 quarter cup fresh basil, chopped

  • 2 stalks celery, finely chopped

  • 2 green onions, sliced

  • Zest and juice of 1 lemon

  • Half cup Greek yogurt or light mayo

  • Salt and pepper to taste


Instructions

  • Place chicken in a large bowl.

  • Add basil, celery, and green onion.

  • Whisk yogurt, lemon juice, lemon zest, salt, and pepper.

  • Pour dressing over chicken and mix gently.

  • Chill for 20 minutes before serving.

Notes

Best served chilled.
