Description

Sweet roasted carrots topped with salty feta and fresh dill for a simple yet elegant spring side dish.


Ingredients

Scale
  • 1 pound carrots

  • 2 tablespoons olive oil

  • 2 tablespoons honey

  • Salt and pepper to taste

  • Half cup crumbled feta

  • 2 tablespoons fresh dill, chopped


Instructions

  • Preheat oven to 425 degrees Fahrenheit.

  • Toss carrots with olive oil, honey, salt, and pepper.

  • Roast for 25 to 30 minutes, flipping once.

  • Transfer to serving dish and top with feta and dill.

  • Serve warm or at room temperature.

Notes

Add nuts for crunch.

Best served fresh but leftovers keep well.
