Ingredients

2 lbs baby potatoes

3 tbsp olive oil

3 garlic cloves, minced

1 tbsp fresh rosemary, chopped

1 tbsp fresh thyme, chopped

2 tbsp parsley, chopped

1 tsp salt

1/2 tsp black pepper

Optional: lemon zest, crushed red pepper, parmesan
Instructions

Preheat oven to 425°F (220°C).

Slice potatoes Hasselback-style.

Mix olive oil, garlic, herbs, salt, and pepper.

Brush mixture over potatoes.

Roast 40–50 minutes, brushing halfway through.

Drizzle with remaining herbs and serve warm.
Notes
Dry potatoes well for crispiness. Add paprika or lemon zest for flavor variation.
