Description

Crispy, golden herb-roasted potatoes with garlic and fresh herbs; a perfect side dish for holidays, parties, and everyday meals.


Ingredients

  • 2 lbs baby potatoes

  • 3 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • 2 tbsp parsley, chopped

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Optional: lemon zest, crushed red pepper, parmesan


Instructions

  • Preheat oven to 425°F (220°C).

  • Slice potatoes Hasselback-style.

  • Mix olive oil, garlic, herbs, salt, and pepper.

  • Brush mixture over potatoes.

  • Roast 40–50 minutes, brushing halfway through.

  • Drizzle with remaining herbs and serve warm.

Notes

Dry potatoes well for crispiness. Add paprika or lemon zest for flavor variation.
