Description

Wholesome, moist, and full of pumpkin spice flavor, these healthy muffins are made with Greek yogurt and maple syrup for a naturally sweet breakfast treat.


Ingredients

Scale
  • 1½ cups whole-wheat flour

  • 1 tsp baking soda

  • 1½ tsp baking powder

  • ½ tsp salt

  • 2 tsp pumpkin pie spice

  • 1 cup pumpkin puree

  • 2 eggs

  • ½ cup Greek yogurt

  • ⅓ cup maple syrup

  • ¼ cup coconut oil

  • 1 tsp vanilla


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Mix dry ingredients in one bowl.

  3. Mix wet ingredients in another.

  4. Combine; stir gently.

  5. Pour into muffin cups and bake 18–20 minutes.

  6. Cool before serving.

Notes

Use Greek yogurt or dairy-free substitute.

For low sugar, use sugar-free syrup.
