Description

A vibrant Greek inspired one pan dinner featuring juicy lemon chicken, herbed rice, tomatoes, spinach, chickpeas, and feta. Light, fresh, and perfect for spring.


Ingredients

Scale
  • 1 pound chicken thighs or breasts sliced

  • 2 tablespoons olive oil

  • Juice and zest of 1 lemon

  • 3 garlic cloves minced

  • 1 cup long grain rice

  • 1 half teaspoon paprika

  • 1 teaspoon oregano

  • 2 cups chicken broth

  • 2 cups cherry tomatoes halved

  • 1 can chickpeas drained

  • 2 cups spinach

  • 1 half cup feta cheese

  • Salt and pepper


Instructions

  • Marinate chicken in lemon, garlic, oil, paprika, oregano, salt, and pepper.

  • Sear chicken until golden and remove.

  • Add garlic and rice, toasting lightly.

  • Add broth, lemon juice, and chickpeas.

  • Nestle chicken on top and cook covered until rice is tender.

  • Add tomatoes and spinach to soften.

  • Top with feta and herbs before serving.

Notes

Add zucchini or peas to enhance spring flavor.

Use basmati rice for fluffiest texture.
