Ingredients

1 pound chicken thighs or breasts sliced

2 tablespoons olive oil

Juice and zest of 1 lemon

3 garlic cloves minced

1 cup long grain rice

1 half teaspoon paprika

1 teaspoon oregano

2 cups chicken broth

2 cups cherry tomatoes halved

1 can chickpeas drained

2 cups spinach

1 half cup feta cheese

Salt and pepper
Instructions

Marinate chicken in lemon, garlic, oil, paprika, oregano, salt, and pepper.

Sear chicken until golden and remove.

Add garlic and rice, toasting lightly.

Add broth, lemon juice, and chickpeas.

Nestle chicken on top and cook covered until rice is tender.
