Description

Fluffy, protein-rich pancakes made with cottage cheese and oats. A healthy, gluten-free breakfast that’s easy to blend, cook, and customize with sweet or savory toppings. Perfect for meal prep, clean eating, or a high-protein morning start.


Ingredients

  • 1/2 cup cottage cheese (full-fat or low-fat)

  • 1/2 cup rolled oats or quick oats

  • 2 large eggs

  • 1/2 ripe banana

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon (optional)

  • Pinch of salt

  • 1 tsp vanilla extract (optional)

  • Butter or oil for cooking


Instructions

  • Add all ingredients to a blender and blend until smooth (30–45 seconds).

  • Let the batter rest for 5 minutes to thicken.

  • Heat a nonstick skillet over medium. Lightly grease with butter or oil.

  • Pour small circles of batter (3–4 inches) into the skillet.

  • Cook 2–3 minutes on the first side until edges set and bubbles appear.

  • Flip gently and cook another 1–2 minutes until golden brown and cooked through.

 

  • Serve warm with desired toppings.
