Ingredients

1/2 cup cottage cheese (full-fat or low-fat)

Instructions

Add all ingredients to a blender and blend until smooth (30–45 seconds).

Let the batter rest for 5 minutes to thicken.

Heat a nonstick skillet over medium. Lightly grease with butter or oil.

Pour small circles of batter (3–4 inches) into the skillet.

Cook 2–3 minutes on the first side until edges set and bubbles appear.
