Description

Ingredients

  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup baby spinach, chopped
  • 1 half cup grated Parmesan or Gruyere
  • 2 tablespoons chopped rosemary and thyme
  • Olive oil, salt, pepper

Instructions

  • Butterfly tenderloin and pound gently.

  • Prepare filling with butter, garlic, herbs, spinach, and cheese.

  • Spread filling and roll tightly. Tie with twine.

  • Sear on all sides, then roast until desired doneness.
