Description

A refreshing Mediterranean inspired salad made with chickpeas, creamy avocado, feta cheese, crisp vegetables, and a bright lemon dressing.


Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 small red onion, finely chopped
  • 3 cups arugula or mixed greens
  • 1 cup crumbled feta
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Add greens, chickpeas, tomatoes, cucumber, avocado, and red onion to a bowl.

  • Sprinkle feta over the salad.

  • Whisk olive oil, lemon juice, garlic powder, salt, and pepper.

  • Pour dressing over salad and toss gently.

  • Serve immediately.
