Description

Ingredients

  • 1 pound chicken breasts or thighs

  • 1 tablespoon oil

  • 1 onion diced

  • 3 cloves garlic minced

  • 1 packet taco seasoning or 3 tablespoons homemade

  • 1 can diced tomatoes

  • 1 can black beans drained

  • 1 cup corn

  • 4 cups chicken broth

  • 1 can green chiles

  • 4 ounces cream cheese or 1 cup heavy cream optional

  • Salt and pepper to taste


Instructions

  1. Sauté onions and garlic until softened.

  2. Add chicken and taco seasoning. Stir to coat.

  3. Pour in broth and tomatoes.

  4. Add beans, corn, and green chiles.

  5. Simmer until chicken is tender.

  6. Remove chicken, shred, and return to pot.
