Ingredients

  • 2 tbsp butter

  • 1 cup diced onion

  • 1 cup diced carrot

  • 1 cup diced celery

  • 2 cloves garlic, minced

  • 3 tbsp flour

  • 4 cups chicken broth

  • 1 cup milk or cream

  • 2 cups cooked chicken, cubed or shredded

  • 2 cups diced potatoes

  • 1 cup frozen peas

  • 1 cup frozen corn

  • 1 tsp thyme

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • In a large pot, melt butter and sauté onion, carrots, and celery for 5 minutes. Add garlic and cook 1 more minute.

  • Stir in flour and whisk in chicken broth gradually. Add potatoes and thyme. Simmer 15 minutes.

  • Add chicken, peas, and corn. Stir in milk or cream and simmer 10 minutes.

  • Season with salt and pepper. Garnish with parsley before serving.
