This Chicken Lo Mein Recipe features tender chicken, crisp vegetables, and soft noodles tossed in a flavorful homemade stir-fry sauce. Quick, fresh, and better than takeout, it’s the perfect weeknight meal.
Ingredients
For the Chicken
1 lb chicken breast or thighs, sliced thin
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
2 tablespoons olive oil
For the Vegetables
1 cup julienned carrots
1 sliced bell pepper
1 cup snap peas or snow peas
1 cup sliced green onions
1 optional cup broccoli, cabbage, or mushrooms
For the Noodles
10 oz lo mein noodles or spaghetti
For the Sauce
1/3 cup soy sauce
1 tablespoon oyster sauce
1 tablespoon sesame oil
3 cloves garlic, minced
1 teaspoon fresh ginger
1 tablespoon brown sugar
1 teaspoon cornstarch
Instructions
Cook noodles according to package instructions. Drain and toss with a splash of sesame oil.
Season chicken with salt, pepper, and garlic powder. Cook in a hot skillet with olive oil until golden. Remove.
Add vegetables to the same skillet and sauté until crisp tender.
Whisk together soy sauce, oyster sauce, sesame oil, garlic, ginger, sugar, and cornstarch.
Return chicken to the skillet. Pour in the sauce and stir until thickened.
Add noodles and toss until fully coated and heated through.
Serve warm with green onions or sesame seeds.
Notes

Swap chicken for shrimp, beef, tofu, or ground chicken.
Use gluten-free noodles if needed.
