Description

This Chicken Lo Mein Recipe features tender chicken, crisp vegetables, and soft noodles tossed in a flavorful homemade stir-fry sauce. Quick, fresh, and better than takeout, it’s the perfect weeknight meal.


Ingredients

For the Chicken

1 lb chicken breast or thighs, sliced thin
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
2 tablespoons olive oil

For the Vegetables

1 cup julienned carrots
1 sliced bell pepper
1 cup snap peas or snow peas
1 cup sliced green onions
1 optional cup broccoli, cabbage, or mushrooms

For the Noodles

10 oz lo mein noodles or spaghetti

For the Sauce

1/3 cup soy sauce
1 tablespoon oyster sauce
1 tablespoon sesame oil
3 cloves garlic, minced
1 teaspoon fresh ginger
1 tablespoon brown sugar
1 teaspoon cornstarch


Instructions

  • Cook noodles according to package instructions. Drain and toss with a splash of sesame oil.

  • Season chicken with salt, pepper, and garlic powder. Cook in a hot skillet with olive oil until golden. Remove.

  • Add vegetables to the same skillet and sauté until crisp tender.

  • Whisk together soy sauce, oyster sauce, sesame oil, garlic, ginger, sugar, and cornstarch.

  • Return chicken to the skillet. Pour in the sauce and stir until thickened.

  • Add noodles and toss until fully coated and heated through.

  • Serve warm with green onions or sesame seeds.

Notes

Great for meal prep.

Swap chicken for shrimp, beef, tofu, or ground chicken.

Use gluten-free noodles if needed.
