Description

A hearty, smoky, Southern-inspired soup filled with sausage, greens, beans, and corn. This viral TikTok favorite is easy to make and full of flavor.


Ingredients

  • 1 tbsp olive oil

  • 14 oz smoked sausage, sliced

  • 1 small onion, diced

  • 3 garlic cloves, minced

  • 1 can (14.5 oz) diced tomatoes

  • 1 can (15 oz) white or pinto beans, drained and rinsed

  • 1 cup corn (fresh, frozen, or canned)

  • 4 cups chopped collard greens or kale

  • 4 cups chicken or vegetable broth

  • 1 tsp smoked paprika

  • 1 tsp dried thyme

  • Salt and pepper to taste

  • Optional: red pepper flakes for spice


Instructions

  • Heat olive oil in a large pot over medium heat. Brown sausage for 4–5 minutes; remove and set aside.

  • Sauté onion for 3–4 minutes, then add garlic and cook 30 seconds.

  • Stir in tomatoes, beans, corn, broth, smoked paprika, thyme, salt, and pepper. Bring to a simmer.

  • Add greens and sausage. Simmer 25–30 minutes until greens are tender.

  • Adjust seasoning, then serve hot with cornbread or rice.

Notes

Mash some beans for a thicker texture.

Use vegan sausage for a plant-based version.

Add potatoes or more beans for a heartier soup.

Store up to 4 days in the fridge or 2 months frozen.
