A hearty, smoky, Southern-inspired soup filled with sausage, greens, beans, and corn. This viral TikTok favorite is easy to make and full of flavor.
Ingredients

1 tbsp olive oil

14 oz smoked sausage, sliced

1 small onion, diced

3 garlic cloves, minced

1 can (14.5 oz) diced tomatoes

1 can (15 oz) white or pinto beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

4 cups chopped collard greens or kale

4 cups chicken or vegetable broth

1 tsp smoked paprika
-
1 tsp dried thyme

Salt and pepper to taste

Optional: red pepper flakes for spice
Instructions

Heat olive oil in a large pot over medium heat. Brown sausage for 4–5 minutes; remove and set aside.

Sauté onion for 3–4 minutes, then add garlic and cook 30 seconds.

Stir in tomatoes, beans, corn, broth, smoked paprika, thyme, salt, and pepper. Bring to a simmer.

Add greens and sausage. Simmer 25–30 minutes until greens are tender.

Adjust seasoning, then serve hot with cornbread or rice.
Notes
Mash some beans for a thicker texture.
Use vegan sausage for a plant-based version.
Add potatoes or more beans for a heartier soup.
Store up to 4 days in the fridge or 2 months frozen.
