Description

A cozy, healthy, flavor-packed one-skillet Santa Fe Chicken perfect for busy weeknights.


Ingredients

Scale
  • 4 boneless skinless chicken breasts

  • 1 cup black beans

  • 1 cup corn

  • 1 can diced tomatoes with green chiles

  • 1 cup shredded cheese

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • Salt and pepper to taste

  • Fresh cilantro, optional

  • Lime wedges, optional


Instructions

  • Season chicken with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.

  • Sear chicken in a skillet over medium high heat until golden on both sides.

  • Add beans, corn, and tomatoes to the skillet.

  • Cover and simmer until chicken is cooked through.

  • Add cheese and let it melt.

  • Garnish with cilantro and lime before serving.

Notes

Use thighs for extra tenderness.

For dairy free, use dairy free cheese.

Add jalapeños for heat.

Serve over rice, cauliflower rice, or in tortillas.
