Soft, moist pumpkin muffins filled with a rich cream cheese center; better than any coffee shop version. Perfect for fall breakfasts or desserts.
Ingredients
Muffins:

1¾ cups flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

2 tsp pumpkin pie spice

1 cup pumpkin puree

½ cup brown sugar

¼ cup sugar

2 eggs
-
⅓ cup oil
-
1 tsp vanilla
Filling:

8 oz cream cheese
-
¼ cup sugar
-
½ tsp vanilla
Instructions
- Preheat oven to 350°F (175°C).
- Mix dry ingredients in a bowl.
- Mix wet ingredients in another bowl.
- Combine both mixtures until smooth.
- Beat filling ingredients until creamy.
- Fill muffin cups halfway, add cream cheese, cover with batter.
- Bake 18–20 minutes, cool before serving.
Notes
Don’t overmix to keep muffins soft.
Swirl filling for a marble look.
Chill filling before using for neat centers.
Store in fridge or freeze for later.
