Description

Soft, moist pumpkin muffins filled with a rich cream cheese center; better than any coffee shop version. Perfect for fall breakfasts or desserts.


Ingredients

Muffins:

  • 1¾ cups flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 tsp pumpkin pie spice

  • 1 cup pumpkin puree

  • ½ cup brown sugar

  • ¼ cup sugar

  • 2 eggs

  • ⅓ cup oil

  • 1 tsp vanilla

Filling:

  • 8 oz cream cheese

  • ¼ cup sugar

  • ½ tsp vanilla


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix dry ingredients in a bowl.
  3. Mix wet ingredients in another bowl.
  4. Combine both mixtures until smooth.
  5. Beat filling ingredients until creamy.
  6. Fill muffin cups halfway, add cream cheese, cover with batter.
  7. Bake 18–20 minutes, cool before serving.

Notes

Don’t overmix to keep muffins soft.

Swirl filling for a marble look.

Chill filling before using for neat centers.

Store in fridge or freeze for later.
