Description

Soft, moist, and full of warm spices, this classic Pumpkin Bread is the ultimate fall bake. Perfect with coffee, butter, or cream cheese.


Ingredients

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 ½ tsp cinnamon

  • ½ tsp nutmeg

  • ½ tsp ground cloves

  • 1 cup pumpkin puree (not pie filling)

  • ½ cup vegetable oil or melted coconut oil

  • 1 cup granulated sugar

  • ½ cup brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.

  2. In a bowl, whisk flour, baking soda, baking powder, salt, and spices.

  3. In another bowl, whisk pumpkin puree, oil, sugars, eggs, and vanilla until smooth.

  4. Add dry ingredients to wet ingredients and mix until just combined.

  5. Pour batter into pan and smooth the top.

  6. Bake 55–65 minutes, until a toothpick comes out clean.

  7. Cool in the pan 10 minutes, then transfer to a wire rack.

Notes

Use 100% pumpkin puree, not pumpkin pie mix.

For extra moisture, add 2 tbsp Greek yogurt or sour cream.

Add chocolate chips or nuts for variation.

Store wrapped at room temperature up to 3 days or freeze for 2 months.
