Description

A rich, creamy Italian-inspired soup loaded with sausage, spinach, mushrooms, and Parmesan cheese. Perfect for fall and winter dinners.


Ingredients

Scale
  • 1 Tbsp olive oil

  • 1 lb Italian sausage

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 1 (14.5-oz) can diced tomatoes

  • 4 cups chicken broth

  • 1 cup heavy cream

  • ½ cup grated Parmesan

  • 3 cups baby spinach

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

Optional: small pasta, red pepper flakes, extra Parmesan


Instructions

  • Heat oil in a pot, brown sausage, then remove.

  • Sauté onion 3–4 min, add garlic 30 sec.

  • Add mushrooms, cook until tender.

  • Return sausage, add tomatoes, broth, and seasoning. Simmer 15–20 min.

  • Stir in cream and Parmesan; simmer gently 3–5 min.

  • Add spinach to wilt. Taste and adjust seasoning. Serve warm.

Notes

Use half-and-half for lighter soup.

Skip pasta for low-carb.

Don’t boil after adding cream.

Store up to 4 days refrigerated; reheat gently.
