A rich, creamy Italian-inspired soup loaded with sausage, spinach, mushrooms, and Parmesan cheese. Perfect for fall and winter dinners.
Ingredients

1 Tbsp olive oil

1 lb Italian sausage

1 onion, diced

3 cloves garlic, minced

8 oz mushrooms, sliced

1 (14.5-oz) can diced tomatoes

4 cups chicken broth

1 cup heavy cream
-
½ cup grated Parmesan
-
3 cups baby spinach
-
1 tsp Italian seasoning
-
Salt & pepper to taste
Optional: small pasta, red pepper flakes, extra Parmesan
Instructions

Heat oil in a pot, brown sausage, then remove.

Sauté onion 3–4 min, add garlic 30 sec.

Add mushrooms, cook until tender.

Return sausage, add tomatoes, broth, and seasoning. Simmer 15–20 min.

Stir in cream and Parmesan; simmer gently 3–5 min.

Add spinach to wilt. Taste and adjust seasoning. Serve warm.
Notes
Use half-and-half for lighter soup.
Skip pasta for low-carb.
Don’t boil after adding cream.
Store up to 4 days refrigerated; reheat gently.
