Description

A creamy, one-pan pot pie made with leftover turkey, vegetables, and buttery biscuits. Comfort food perfection for the day after Thanksgiving.


Ingredients

Scale
  • 2 cups cooked turkey, shredded

  • 2 cups mixed vegetables (peas, carrots, corn)

  • 3 tbsp butter

  • 3 tbsp flour

  • 1 ½ cups chicken or turkey broth

  • ½ cup milk or cream

  • ½ tsp thyme or rosemary

  • Salt & pepper to taste

  • 1 can refrigerated biscuits


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In an oven-safe skillet, melt butter and cook onions until soft.
  3. Stir in flour, then slowly whisk in broth and milk until thick.
  4. Add turkey, veggies, and herbs; season to taste.
  5. Place biscuits on top and bake 20–25 minutes until golden and bubbly.

Notes

Use puff pastry instead of biscuits if preferred.

Add leftover gravy for extra flavor.

Make filling ahead and refrigerate; bake with biscuits when ready.
