Description
A hearty and flavorful Jamaican Chicken Soup made with pumpkin, corn, and aromatic spices. A true Caribbean comfort dish perfect for cozy nights.
Ingredients

1 ½ lbs chicken pieces (legs or thighs, skin removed)

1 tbsp olive oil

1 small onion, chopped

2 garlic cloves, minced

1 sprig fresh thyme or 1 tsp dried

1 medium carrot, sliced
-
1 ear of corn, cut into chunks

½ lb pumpkin or butternut squash, cubed

2 small potatoes, diced
-
1 green onion, chopped
-
1 Scotch bonnet pepper (whole, optional)

6 cups chicken broth
-
1 tsp all-purpose seasoning or chicken bouillon

Salt and black pepper to taste

Optional: dumplings (flour and water dough pieces)
Instructions

Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and thyme for 2–3 minutes.

Add chicken pieces and sear on all sides for 4–5 minutes.

Stir in carrot, corn, pumpkin, potatoes, green onion, and chicken broth. Season with all-purpose seasoning, salt, and pepper.

Bring to a boil, then reduce heat and simmer 40–45 minutes until chicken and vegetables are tender.

Add Scotch bonnet pepper whole and simmer 5 more minutes. Remove pepper before serving.
Notes
Keep Scotch bonnet whole for mild spice or omit for no heat.
Add dumplings for a traditional version.
Adjust thickness with extra broth if needed.
Store up to 4 days in the fridge or 3 months frozen.
