Description

A hearty and flavorful Jamaican Chicken Soup made with pumpkin, corn, and aromatic spices. A true Caribbean comfort dish perfect for cozy nights.


Ingredients

Scale
  • 1 ½ lbs chicken pieces (legs or thighs, skin removed)

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 1 sprig fresh thyme or 1 tsp dried

  • 1 medium carrot, sliced

  • 1 ear of corn, cut into chunks

  • ½ lb pumpkin or butternut squash, cubed

  • 2 small potatoes, diced

  • 1 green onion, chopped

  • 1 Scotch bonnet pepper (whole, optional)

  • 6 cups chicken broth

  • 1 tsp all-purpose seasoning or chicken bouillon

  • Salt and black pepper to taste

  • Optional: dumplings (flour and water dough pieces)


Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and thyme for 2–3 minutes.

  • Add chicken pieces and sear on all sides for 4–5 minutes.

  • Stir in carrot, corn, pumpkin, potatoes, green onion, and chicken broth. Season with all-purpose seasoning, salt, and pepper.

  • Bring to a boil, then reduce heat and simmer 40–45 minutes until chicken and vegetables are tender.

  • Add Scotch bonnet pepper whole and simmer 5 more minutes. Remove pepper before serving.

Notes

Keep Scotch bonnet whole for mild spice or omit for no heat.

Add dumplings for a traditional version.

Adjust thickness with extra broth if needed.

Store up to 4 days in the fridge or 3 months frozen.
