Description

A warm, hearty, protein packed lasagna inspired soup made with lean meat, tomatoes, noodles and a creamy ricotta topping. Perfect for healthy dinners and meal prep.


Ingredients

Scale
  • 1 lb lean ground turkey or beef

  • 1 onion, diced

  • 4 garlic cloves, minced

  • 1 can crushed tomatoes

  • 1 can diced tomatoes

  • 4 cups chicken broth

  • 8 broken lasagna noodles

  • 2 cups fresh spinach

  • 1 tablespoon Italian seasoning

  • Salt and pepper to taste

  • Red pepper flakes optional

  • 1 cup ricotta cheese

  • 1 cup grated Parmesan


Instructions

  1. Brown the meat.

  2. Add onion and garlic.

  3. Add tomatoes and broth.

  4. Season and simmer.

  5. Add broken noodles.

  6. Stir in spinach.

  7. Mix ricotta and Parmesan.

  8. Serve soup with ricotta topping.

Notes

For extra protein, mix cottage cheese into the ricotta topping.

Add vegetables as desired.
