Description

A hearty, healthy, and comforting casserole made with ground turkey, sweet potatoes, onions, and cheese. Perfect for cozy weeknights or as a wholesome Thanksgiving side.


Ingredients

  • 1 lb ground turkey

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 3 cups sweet potatoes, peeled and cubed

  • 1 tsp thyme

  • 1 tsp smoked paprika

  • Salt and pepper to taste

  • ½ cup chicken broth or milk

  • 1 cup shredded cheese (cheddar or mozzarella)

  • 1 tbsp chopped parsley (for garnish)


Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.

  2. Heat olive oil in a skillet. Add ground turkey and onions. Cook until browned.

  3. Season with thyme, paprika, salt, and pepper.

  4. Transfer to baking dish and mix with sweet potatoes and broth.

  5. Top with cheese, cover with foil, and bake 30 minutes. Uncover and bake 10–15 more minutes.

  6. Garnish with parsley before serving.

Notes

Substitute ground chicken for a lighter option.

Add bell peppers or spinach for more vegetables.
