Ingredients

2 lbs carrots, peeled and trimmed

3 tbsp butter

2 tbsp honey

1 tbsp olive oil

1 tsp salt

½ tsp black pepper

1 tsp fresh thyme or rosemary, chopped

Optional: pinch of cinnamon or nutmeg
Instructions

Preheat oven to 400°F and line a baking sheet with parchment paper.

Melt butter, honey, and olive oil in a saucepan. Stir in salt, pepper, and herbs.

Toss carrots in the glaze and spread evenly on the baking sheet.

Roast for 25–30 minutes, turning halfway, until caramelized and tender.

Drizzle with remaining glaze and garnish with herbs before serving.
Notes
Substitute maple syrup for honey if desired.
Add Dijon mustard for a honey mustard variation.
