Description

A simple, flavorful side dish made with roasted potatoes, carrots, and zucchini coated in garlic and herbs. Perfect for holidays, family dinners, or healthy meal prep.


Ingredients

  • 1 lb baby potatoes, halved

  • 2 cups carrots, cut into chunks

  • 2 medium zucchinis, sliced thick

  • 3 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • Salt and pepper to taste

  • 2 tbsp fresh parsley, chopped


Instructions

  • Preheat oven to 425°F and line a baking sheet with parchment paper.
  • Toss potatoes, carrots, and zucchini with olive oil, garlic, herbs, salt, and pepper.
  • Arrange on baking sheet in a single layer.
  • Roast for 25–30 minutes, stirring halfway through, until golden and tender.
  • Garnish with fresh parsley before serving.

Notes

For crispier veggies, broil for 2–3 minutes at the end.

Add lemon zest or Parmesan for extra flavor.
