Ingredients

12 large eggs

2 tbsp roasted beet puree

¼ cup mayonnaise

1 tbsp Dijon mustard

1 tsp sriracha

½ tsp smoked paprika

Salt & pepper, to taste

6 black olives, sliced
Instructions

Hard boil eggs, peel, and slice in half.

Mash yolks with mayo, Dijon, beet puree, sriracha, paprika, salt, and pepper.

Pipe filling into egg whites.

Top each with an olive slice as the pupil.

Drizzle with beet reduction or hot sauce for a bloody effect.
