Description

Spooky yet fancy Halloween deviled eggs with beet-colored filling, spicy kick, and olive pupils for a creepy gourmet appetizer.


Ingredients

Scale
  • 12 large eggs

  • 2 tbsp roasted beet puree

  • ¼ cup mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tsp sriracha

  • ½ tsp smoked paprika

  • Salt & pepper, to taste

  • 6 black olives, sliced


Instructions

  1. Hard boil eggs, peel, and slice in half.

  2. Mash yolks with mayo, Dijon, beet puree, sriracha, paprika, salt, and pepper.

  3. Pipe filling into egg whites.

  4. Top each with an olive slice as the pupil.

  5. Drizzle with beet reduction or hot sauce for a bloody effect.

  6. Chill before serving.

Notes

Add beet veins for a creepier effect.

Make spicy or mild depending on audience.

Can prep eggs ahead but assemble day-of.
