Ingredients

2 pounds chicken breast or chicken thighs

1 cup low sodium soy sauce

1 cup water

1 to 2 tablespoons brown sugar or honey

1 teaspoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

Place the chicken in the bottom of the crockpot.

In a bowl, combine soy sauce, water, garlic, ginger, rice vinegar, brown sugar or honey, and sesame oil.

Pour the sauce mixture over the chicken.

Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours.

Remove the chicken and shred or slice.

Stir cornstarch slurry into the crockpot to thicken the sauce.

Return chicken to the slow cooker and coat with the sauce.
