Filling

2 cups (85g) kataifi, finely chopped

3 tbsp unsalted butter

1 cup (113g) powdered sugar

3 tbsp (16g) unsweetened cocoa powder

¼ tsp almond extract (or vanilla)

2–3 tbsp milk (any kind)

2 oz (56g) melted milk chocolate

Instructions

Bloom Yeast: Mix warm milk, 1 tsp sugar, and yeast. Let sit for 5–7 minutes.

Make Dough: Combine flour, salt, butter, egg, sugar, and yeast mixture. Mix and knead for 10 minutes until smooth and elastic.

First Rise: Let the dough rise in a warm place for 1 hour or until doubled.

Prep Filling: Toast kataifi in butter until golden. Cool and mix with pistachio cream.

Divide & Shape: Portion dough into 8 balls (~60g each), shape, and rest for 45 minutes.

Make Glaze: Mix powdered sugar, cocoa, extract, and milk until smooth.

Fry Donuts: Fry donuts at 350°F for 45 seconds per side, flip and repeat.
