Crockpot Parmesan Roasted Potatoes

Description

Tender baby potatoes slow cooked with butter, garlic, herbs, and Parmesan. An easy and flavorful side dish for holiday dinners.


Ingredients

Scale
  • 2 pounds baby potatoes, halved

  • 4 tablespoons butter, melted

  • 2 tablespoons olive oil

  • 1 half cup grated Parmesan

  • 4 garlic cloves, minced

  • 1 teaspoon Italian seasoning

  • Salt and pepper to taste

  • Fresh parsley


Instructions

  • Halve potatoes and place in crockpot.

  • Mix butter, oil, garlic, and seasoning.

  • Pour over potatoes and stir.

  • Add half the Parmesan.

  • Cook on low 4 to 5 hours.

  • Add remaining Parmesan near the end.

  • Garnish with parsley.

Notes

For browning, broil briefly. Works with Yukon Golds and reheats easily.
