Description

A festive and refreshing spinach salad with dried cranberries, toasted almonds, and a bright homemade vinaigrette. Perfect for Christmas dinner or holiday gatherings.


Ingredients

  • 8 cups baby spinach

  • 3/4 cup dried cranberries

  • 1/2 cup sliced almonds, toasted

  • 1 tbsp sesame seeds (optional)

  • 2 tbsp finely minced red onion

Dressing:

  • 1/4 cup olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • Salt and pepper


Instructions

  • Add spinach to a serving bowl.

  • Top with cranberries, almonds, sesame seeds, and red onion.

  • Whisk dressing ingredients until emulsified.
