Description

A cozy, flavorful stovetop soup made with tender chicken, cheesy tortellini, and vegetables simmered in a savory broth. Perfect for quick weeknight dinners or cozy fall meals.


Ingredients

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 cup diced onion

  • 1 cup diced carrot

  • 1 cup diced celery

  • 3 cloves garlic, minced

  • 6 cups chicken broth

  • 2 cups cooked shredded chicken

  • 10 oz cheese tortellini (fresh or frozen)

  • 1 tsp Italian seasoning

  • ½ tsp dried thyme

  • 1 bay leaf

  • Salt and pepper to taste

  • 2 tbsp fresh parsley, chopped


Instructions

  • Heat olive oil and butter in a large pot. Add onion, carrot, and celery. Sauté 5 minutes.

  • Add garlic, Italian seasoning, thyme, and bay leaf. Pour in chicken broth and bring to a boil.

  • Reduce heat and simmer for 10 minutes. Add shredded chicken and tortellini. Cook until tortellini are tender.

  • Remove bay leaf, season to taste, and stir in fresh parsley before serving.

Notes

Use rotisserie chicken for convenience.

Add spinach or kale for extra greens.

For a creamy twist, stir in ½ cup of heavy cream at the end.
