Ingredients

1 tbsp olive oil

1 tbsp butter

1 cup diced onion

1 cup diced carrot

1 cup diced celery

3 cloves garlic, minced

6 cups chicken broth

2 cups cooked shredded chicken

10 oz cheese tortellini (fresh or frozen)

1 tsp Italian seasoning

½ tsp dried thyme

1 bay leaf

Salt and pepper to taste

2 tbsp fresh parsley, chopped
Instructions

Heat olive oil and butter in a large pot. Add onion, carrot, and celery. Sauté 5 minutes.

Add garlic, Italian seasoning, thyme, and bay leaf. Pour in chicken broth and bring to a boil.

Reduce heat and simmer for 10 minutes. Add shredded chicken and tortellini. Cook until tortellini are tender.

Remove bay leaf, season to taste, and stir in fresh parsley before serving.
Notes
Use rotisserie chicken for convenience.
Add spinach or kale for extra greens.
For a creamy twist, stir in ½ cup of heavy cream at the end.
