Description

A creamy, comforting soup with tender chicken, soft gnocchi, and spinach in a garlic cream broth; a 30-minute Olive Garden-inspired favorite made on the stovetop.


Ingredients

Scale
  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 cup diced onion

  • 1 cup diced carrot

  • 1 cup diced celery

  • 3 cloves garlic, minced

  • 3 tbsp flour

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 2 cups cooked chicken, cubed or shredded

  • 16 oz potato gnocchi

  • 2 cups fresh spinach

  • 1 tsp Italian seasoning

  • ½ tsp dried thyme

  • Salt and pepper to taste


Instructions

  • Heat olive oil and butter in a large pot. Add onion, carrot, and celery; sauté until tender.

  • Add garlic and cook 1 minute. Stir in flour and whisk in broth until smooth.

  • Add chicken and gnocchi; simmer 10 minutes.

  • Stir in cream, spinach, and seasonings. Simmer until spinach wilts.

  • Taste and adjust seasoning before serving.

Notes

Use half-and-half for a lighter version.

For extra richness, stir in grated Parmesan cheese before serving.
