Ingredients

1 tbsp olive oil

1 tbsp butter

1 cup diced onion

1 cup diced carrot

1 cup diced celery

3 cloves garlic, minced

3 tbsp flour

4 cups chicken broth

1 cup heavy cream

2 cups cooked chicken, cubed or shredded

16 oz potato gnocchi

2 cups fresh spinach

1 tsp Italian seasoning

½ tsp dried thyme

Salt and pepper to taste
Instructions

Heat olive oil and butter in a large pot. Add onion, carrot, and celery; sauté until tender.

Add garlic and cook 1 minute. Stir in flour and whisk in broth until smooth.

Add chicken and gnocchi; simmer 10 minutes.

Stir in cream, spinach, and seasonings. Simmer until spinach wilts.

Taste and adjust seasoning before serving.
Notes
Use half-and-half for a lighter version.
For extra richness, stir in grated Parmesan cheese before serving.
