Ingredients

  • 1.5 pounds chicken thighs or breast
  • 3 tablespoons ghee
  • 10 to 12 dried Kashmiri chilies
  • 1 tablespoon tamarind paste
  • 6 garlic cloves
  • 1 teaspoon cumin
  • 2 teaspoons coriander
  • 1 teaspoon pepper
  • Salt to taste
  • Curry leaves optional

Instructions

  • Soak dried chilies in warm water until soft.
  • Blend softened chilies with garlic, tamarind, and spices to form a paste.
  • Coat chicken with the paste and marinate 30 minutes.
  • Heat ghee in a skillet and add the marinated chicken.
  • Roast slowly until the masala thickens and coats the chicken.
  • Add curry leaves and finish cooking until fragrant.
  • Serve hot with rice, roti, or vegetables.

Notes

Adjust chilies to control heat.

Thighs produce the juiciest texture.

Add a small pinch of jaggery if the tamarind becomes overpowering.
