Description

A fresh and vibrant spring salad made with blueberries, pistachios, greens, and a light vinaigrette.


Ingredients

  • 6 cups mixed spring greens

  • 1 cup fresh blueberries

  • Half cup shelled pistachios, chopped

  • Quarter cup red onion, thinly sliced

  • Half avocado or quarter cup crumbled cheese, optional

  • 3 tablespoons olive oil

  • 1 tablespoon lemon juice or vinegar

  • Salt and pepper to taste


Instructions

  • Place greens in a large bowl.

  • Add blueberries, pistachios, onion, and optional toppings.

  • Whisk olive oil, lemon juice, salt, and pepper.

  • Drizzle dressing over salad and toss gently.
