A vibrant holiday salad with crisp apples, tart cranberries, and toasted pecans tossed in a sweet and citrusy honey-orange dressing.
Ingredients

6 cups arugula or baby spinach

2 apples (Honeycrisp or Fuji), thinly sliced

ยฝ cup dried cranberries

ยฝ cup toasted pecans

ยผ cup crumbled goat cheese (optional)

Dressing: 3 tbsp olive oil, 2 tbsp orange juice, 1 tbsp honey, 1 tsp Dijon mustard, salt & pepper
Instructions
- Toast pecans in a skillet 4โ5 minutes until fragrant; cool.
- Whisk dressing ingredients until smooth.
- Combine greens, apples, cranberries, and pecans in a bowl.
- Drizzle dressing over salad and toss gently.
- Top with goat cheese and serve immediately.
Notes
Add lemon to apples to prevent browning.
Make dressing and toast nuts ahead for quick prep.
For vegan version, skip cheese and use maple syrup.
